Pumpkin Spice Cake Trifle

  • 1 box Yellow Cake Mix Aldi has cake mix for under a dollar!
  • 15 oz Pumpkin Puree
  • 3 Eggs
  • 1 Tablespoon Nutmeg
  • 1 Teaspoon Cinnamon
  • 1/4 Teaspoon Ground Ginger
  • Non-stick spray
  • Whipped Cream
  • Glasses


  1. Preheat oven to 350°
  2. Start by mixing together all dry ingredients. You will need to use a whisk or fork to mix it together and break up any chunks. If you leave any clumps of dry ingredients you will end up with white spots in your cake. I learned this the hard way the first time I made these.
  3. Add all of your wet ingredients next. You will want to add your eggs and pumpkin puree. Do not mix it in until you have both ingredients.
  4. Use your hand mixer to mix it. Turn it on low and only mix until well mixed. You don't want too much air in the batter. Just make sure to mix it until there are no clumps and then you are good to go.
  5. Spray a cookie sheet with non-stick spray. You will want to make sure you spray the entire bottom of the cookie sheet.
  6. Spread a layer of batter on the cookie sheet. These are what you will use when they are cooked to do your cookie cutter cookies.
  7. Bake at 350° for 6-10 minutes. You will want to check it with a toothpick and see when it is cooked by seeing when the toothpick comes out clean. The time will vary depending on your oven.
  8. Cut your cake into smaller pieces that will fit in your glass.
  9. You will want to layer in cake and then whipped cream in layers until you have filled your glass the way that you want it to be.
  10. Serve and enjoy! Make sure to refrigerate when not being served.
