Pumpkin Spice Cake Mix Cookies

  • 1 box Yellow Cake Mix Aldi has cake mix for under a dollar!
  • 15 oz Pumpkin Puree
  • 3 Eggs
  • 1 Tablespoon Nutmeg
  • 1 Teaspoon Cinnamon
  • 1/4 Teaspoon Ground Ginger
  • Non-stick spray


  1. Preheat oven to 350°
  2. Start by mixing together all dry ingredients. You will need to use a whisk or fork to mix it together and break up any chunks. If you leave any clumps of dry ingredients you will end up with white spots in your cookies. I learned this the hard way the first time I made these.
  3. Add all of your wet ingredients next. You will want to add your eggs and pumpkin puree. Do not mix it in until you have both ingredients.
  4. Use your hand mixer to mix it. Turn it on low and only mix until well mixed. You don't want too much air in the batter. Just make sure to mix it until there are no clumps and then you are good to go.
  5. Spray a cookie sheet with non-stick spray. You will want to make sure you spray the entire bottom of the cookie sheet.
  6. Spread a layer of batter on the cookie sheet. These are what you will use when they are cooked to do your cookie cutter cookies.
  7. Spray a second cookie sheet with non-stick spray.
  8. Add a spoonful of batter to your cookie sheet. You will want to space it out with at least an inch and a half or two inches between each cookie. They will spread as they cook.
  9. Bake at 350° for 6-10 minutes or until a toothpick inserted into the center comes out clean.
  10. Your finished cookies will look like the ones pictured above. Let them cool completely then serve with a glass of milk or drizzle with a bit of caramel.
  11. Once your cookie sheet is completed cooked and you have pulled them out to cool you can use a cookie cutter to make themed cookies. For these I recommend going slowly as they can stick to the cookie cutter.
