Instant Pot Meatloaf and Potatoes Recipe

**Disclaimer - This can make two really large meatloaves or you can use half to make meatballs for another night.

Meatloaf Ingredients

  • 2 pounds Ground Chuck
  • 1/2 cup brown sugar
  • 1 cup oatmeal
  • 2 tspĀ  onion powder I don't like the texture of onion. You can use actual onion if you like it.
  • 2 tspĀ  minced garlic
  • 2 eggs
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup ketchup

Potato Ingedients

  • 5 large potatoes
  • 2 tablespoons minced garlic
  • 1 tablespoon butter
  • 1 cup water
  • Salt and pepper to taste
  • 1 teaspoon onion powder I hate the texture of onions. If you eat them, you can use actual onion.

Meatloaf Sauce Recipe

  • 1 cup ketchup
  • 1/2 cup brown sugar
  • 1/4 cup worcestershire sauce


  1. Start by mixing together meatloaf ingredients and form a meatloaf.
  2. Peel and quarter your potatoes.
  3. Put on the bottom of your instant pot and add all of the seasonings and your 1 cup of water.
  4. Put the rack that came with your instant pot in over the potatoes.
  5. Add your meatloaf to the instant pot with foil holding the bottom of it. (This will keep the grease from draining on your potatoes.)
  6. Make your meatloaf sauce by mixing the ingredients above.
  7. Coat the top of your meatloaf with the sauce.
  8. Set aside the rest of your sauce for after the meatloaf is cooked.
  9. Make sure your vent is set to sealed.
  10. Cook for 16 minutes on manual.
  11. Pull out your meatloaf and drain off all grease into a can or container you can throw away.
  12. You can serve your potatoes as they are or they will mash really easily for mashed potatoes.
  13. Serve and Enjoy!
