Ingredients

  • 3 Chicken Breasts
  • 1 Packet Taco Seasoning
  • Taco Bowls - I got mine at Aldi but I am sure other stores have them.
  • 2 cups rice
  • 2 cans seasoned black beans
  • Taco Blend Shredded Cheese
  • Sour Cream
  • Shredded Lettuce
  • Salsa - If you eat it. Hubby does and we don't.
  • 1 1/4 cups water

Instructions

  1. Start by putting chicken breasts in your instant pot.
  2. Pour taco seasoning over chicken breasts.
  3. Add your black beans. - Do not strain the juice!
  4. Add 2 cups of rice and 1 1/4 cups of water.
  5. Make sure your instant pot is set to seal.
  6. Cook on manual for 18 minutes.
  7. Release seal and let vent completely.
  8. Pull out your chicken breasts and use a fork to shred them up.
  9. Add them back to the pot and stir.
  10. Serve and enjoy!

Recipe Notes

**Disclaimer - This recipe does make more than one family meal's worth. It's great for freezer cooking or for a taco bar. Any filling you don't use for this meal can be bagged and frozen. To reheat, pour into a pot with 1/2 cup water and stir until heated thru. The water will help keep your rice moist.
