Pan-Seared Pork Chops with Caramelized Onions and Home Fries

I know that a lot of you have told me that one of the biggest struggles you have with meal prep is the timing to get it all hot and ready at one time. So, I’m going to take you through my meal prep process for the entire meal to help you get everything to the table hot and ready.

Ingredients

4 Boneless pork chops
4-6 large potatoes (Depends on what your family will eat.)
2 – Onions
Coconut Oil (Or oil of your choice)
Adobo Seasoning
Onion Powder – 1/4 tsp
Garlic Powder – 1 TBSP
Italian Seasoning – 1 TBSP
Salt – 1/4 tsp
Water – 1/4 cup

Preheat Pan on Stovetop – Add 2 tablespoons of coconut oil to your pan and turn the temperature to medium so your pan can heat up while you are cutting your onions.

2 onions for caramelized onion recipe

Prepare onions – Start by cleaning and peeling the top layer off your onions.

sliced onions for caramelized onion recipe

Slice your onions – You will start by slicing your onions in half and then cut them into smaller portions like the ones pictured above. You will want thin strands of onion.

Pan searing onions

Add your sliced onion to the pan. – You will want to toss these around to coat them in your oil. With the heat at medium, you can turn your focus to the potatoes.

Pre-heat the oven to 425° before you start working on potatoes. – You will need this for a later step and this will save you time in the long run.

Potatoes to be sliced for home fries

Wash potatoes well before slicing.

Put a pot of water on your stove and put on high to boil while cutting potatoes. – This will also save you some meal prep time later.

Slice up your potatoes. – Start by halving your potato in a long way. Then cut your halves into small fry slices like the ones pictured above.

Throw potato slices into your pot of boiling water. – You will want to set a timer for ten minutes as these potatoes will not be fully cooked in your pot of boiling water.

Stir onions. – While your potatoes are boiling, take some time to stir the onions well.

DIY Home Fry Seasoning Mix

Make your potato seasoning. – For your seasoning, you will mix together garlic powder, onion powder, italian seasoning, and salt. (You may not use all of this and can store it in a ziploc bag for future potatoes.)

Continue to stir onions – Stir your onions again to make sure they are not overcooking in only certain areas.

Coat a cookie sheet with oil lightly. – I used about two teaspoons of coconut oil for ours.

Strain potatoes. – Once your ten minutes has completed you will strain the potatoes.

Lay potatoes on pan and season. – You will not want to over season your potatoes. A light coating of seasoning will help you to not have a flavor that is too strong.

Put potatoes in the oven at 425° – These can be left alone while you focus on your other ingredients and the pork.

Caramelized Onions cooked in pan

Remove caramelized onions from pan and cover. – You will want to remove your onions from the pan and put them in a container that you can cover.

Do not wash the pan after removing onions. – Your onions will season the pan.

Add 2 teaspoons of oil to the pan. – This is to keep your pork from sticking

Cook pork on its fat side. – Add your pork chops to the pan but start by cooking them on the side where the fat is. This will help to render the fat down and season your pan before you start cooking the pork chops.

Turn pork on its side. – Once you cook the fat down for about a minute, you will turn the pork on its top or bottom. Season it with adobo.

Cook pork on top and bottom for four minutes each. – You will want to cook each side for four minutes at medium.

Add 1/4 cup of water and cover. – Now is the time to add 1/4 cup of water to the pan and put a lid on it.

Cook for another 10 minutes. – This will give your pork time to get more tender and your potatoes time to finish cooking.

Remove everything from the oven, serve, and enjoy!
