Are you planning a get together with friends or looking for something fun to do with the kids? One of our favorite things to do is a mashed potato bar. There’s just something about getting the chance to mix up some of your favorite flavors into something delicious. I have seen a lot of people recommend doing a mashtini. We don’t do those. I find that wine glasses hold the food better and distribute it more evenly. Let me share four of our favorite recipes.
Mashed Potato Bar
You will have to tweak these recipes based on the size of the crowd you are cooking for. I tend to cook extra knowing that we can put some away for a future meal. I will typically do an entire day of meal planning with many of the ingredients here and then end the day with a mashed potato bar for the family.
Instant Pot Mashed Potatoes Recipe
Potatoes – 8 russet potatoes
1 cup water
1 tablespoon garlic powder
1 teaspoon onion powder
1 tablespoon parsley
1 teaspoon salt
Wash your potatoes well.
Peel and slice your potatoes so that they will cook well in the instant pot.
Add 1 cup of water to the instant pot and then add potatoes.
Set your instant pot to 30 minutes on chicken. – Make sure your vent is closed and leave the potatoes alone to cook.
Once the instant pot finishes carefully open the vent and let vent completely.
Put all of your potatoes into a large bowl with your seasonings and 1 cup of water or chicken stock.
Use a hand mixer to mix well and mash the potatoes to the consistency you want.
Bacon mashed potatoes
Making the bacon
Using kitchen scissors, cut your bacon into small pieces.
Put into a pan and cook at medium until you get it to the level of crispyness you want.
While the bacon is cooking, slice up your green onions. This is also a great time get your cheese out.
Move bacon, cheese, and onions to containers you want them in for your mashed potato bar.
Making your layered mashed potatoes.
You will want to layer in mashed potatoes, cheese, bacon. continue to layer until you have the amount you want.
You can add green onions or sour cream at the end if you want to.
This is a delicious flavor combination and you can easily leave out cheese for a dairy-free version of this.
Ham Mashed Potatoes
Making the Ham
Cut your ham steak into small chunks.
Cook your ham in a skillet until hot.
While your ham is cooking cut up your green onions and move your cheese to the container you will have it in.
Layer ham, potatoes, and cheese until you have the amount you want.
You can garnish the tops with sour cream and green onions if you want to add a special touch to it. However, you can also leave off the cheese for a dairy-free mashtini as well.
Pulled BBQ Chicken Mashtini
Making the pulled bbq chicken
Chicken breasts – (I recommend making more than you need for freezer cooking or other meals)
BBQ Sauce – 1 Cup
Water – 1 Cup
Add your chicken breasts to your instant pot.
Add 1 cup water
Set your instant pot for 45 minutes on meat.
Make sure the vent is closed well.
When your chicken is done, vent completely.
Use a fork to shred the chicken and then add in your bbq sauce and mix well.
Layer your potatoes and bbq chicken.
You can add cheese, onions, or even some cornbread to the top for a fun accent. My husband said onion rings would be another awesome topping for these!
I know some will say “Tacos and mashed potatoes? Just no!” I felt the same way but I challenge you to give it is a chance. These are actually really delicious!
Ground Beef – I recommend doing two pounds. (This will give you the chance to freeze some prepped meat for a future taco night.)
Taco Seasoning – I typically will use one pack for two pounds of meat.
Water – (Check the taco packet for the amount it requires.)
Making the taco meat
Brown your ground beef and then drain out all of the grease.
In a separate bowl, mix together your seasoning and water. (This helps you avoid clumps in your taco meat and gets the flavor spread out better.)
Layer mashed potatoes taco meat and cheese.
You can add sour cream or some of your other taco toppings to add some extra flavor to this if you are looking to add your own twist to this one.
Are you doing a mashed potato bar for a party or get together? The cups pictured above are a dollar a piece at Wal Mart. However, you can get plastic wine glasses or plastic cups and have just as much fun.
Looking to kick it up a notch? Do the same thing in a martini glass!
