We have been working on adding some variety to our dinners. Because of the Instant Pot and how it simplifies my life, I have tried to add in recipes using it. Teriyaki chicken has always been a favorite of ours. It was no surprise when I decided to try out an instant pot teriyaki chicken recipe for dinner. This recipe is quick and easy.

Instant Pot Teriyaki Chicken Recipe

The flavor on the rice is very rich. If you want it a little less strong, you will want to decrease your teriyaki sauce a bit.
You can make your own teriyaki sauce but I preferred the simplicity of using a store bought version and dressing it up a bit to be what our family could actually enjoy. I’m not one to stick with the sauces I buy at the store. I will always add something to it to get the flavor I think it should have had to start with.

Ingredients

1 cup Teriyaki marinade – (I picked mine up at Wal Mart)
2 Tablespoons honey
1 Tablespoons minced garlic
2 cups rice
2 boneless skinless chicken breasts
2 cups water

Directions

Cut up your chicken into smaller pieces. – I like mine to be cut up like chicken tenders and just use a pair of kitchen scissors to cut it.

Put chicken in the bottom of the instant pot.

Add garlic, teriyaki, and honey.

Mix together so that the chicken fully coated in the sauce.

Add 2 cups water and 2 cups rice.

Set your instant pot to chicken/manual for 15 minutes.

Close the valve and let it cook.

When the time is up, open the vent and let vent completely.

This recipe also freezes well. You can put it in a tupperware or freezer bag. To reheat, add a bit of water and heat thru in a pan with a lid.
