In case you wondered, I am still loving my instant pot. It just makes dinner so much easier. This week I needed something a bit more savory. I put together this instant pot butter garlic chicken recipe and it definitely hit the spot. My son gave me a thumbs up and everything!
Instant Pot Butter Garlic Chicken Recipe
You may have to tweak the amounts if you have a larger family. This worked great for our family of 4.
Ingredients
1 pound chicken breast cut up
2 sticks butter. (You won’t eat it all. I promise.)
3 tablespoons minced garlic
5 red potatoes cut up into slices
1 teaspoon onion powder or onion if you like it
1 pinch salt
1 pinch pepper
2 cups baby carrots or sliced carrots
1/2 cup water
Directions
Start by cutting up your chicken and placing it in the bottom of your instant pot. – I cut mine into chicken tender pieces. You can cut it smaller if you prefer.
In a saucepan melt together your butter, garlic, and seasonings. – I warmed mine on medium heat until it melted down together stirring constantly.
Pour this mixture over your chicken in your instant pot.
Layer your sliced potatoes and carrots on top of the chicken.
I added a little garlic on top. It isn’t necessary. I just wanted a bit of extra flavor as we love garlic.
Seal the vent.
Cook on meat setting for 20 minutes.
Release the vent and let vent completely before opening.
Drain the fluids and set them aside. You can use these as a butter garlic topping for your chicken and potatoes. For this, I poured the contents of the instant pot into a strainer in a pot. Then I just poured the meat and potatoes back in the instant pot and used the sauce as a topping later.
Serve and enjoy.
