A lot of you have been asking for more allergy-friendly recipes on the blog. I didn’t want to leave you without a good allergy-friendly dinner so I decided to share one of my favorites! This recipe is free of dairy, gluten, eggs, soy, and nuts. It’s also a simple dinner recipe that doesn’t involve much prep time. Check out this easy instant pot beef recipe.
Instant Pot Beef Recipe
I was looking for a bit of a comfort food option but I wasn’t in the mood for a beef stew. This was my compromise. My kids call these mashed potatoes the “good potatoes.” I love that it’s a simple recipe that can be prepared without much stress.
Ingredients
- 1 Pound Beef Stew Meat
- 6 medium/large potatoes
- 2 tablespoons adobo seasoning
- 8 oz baby carrots
- 1 sweet onion
- 1 cup water
- 1 tablespoon nutiva butter flavored coconut oil (Dairy-free!)
- 1 teaspoon parsley
Directions
Start by layering the beef stew meat on the bottom of your instant pot. You will want a single layer of beef stew meat.
Add your adobo to the meat.
Add 1 cup of water. You do not need the water to wash off the seasonings. Instead, add it to one portion of the pot.
Put the metal rack in the pot that comes with the instant pot. This will be where you layer in the potatoes, carrots, and onion.
Add a single layer of potatoes – Make sure to poke them with a fork first. You will want them in one layer. Don’t stack them.
Add your baby carrots. You can use regular carrots if you want. I simply liked the ease of prep on baby carrots.
Peel and quarter your onion. Remove the peels, tops, and bottoms of the onion. Cut it into four pieces and add it to your instant pot.
Close the lid and make sure the instant pot is set to sealing. You will want the instant pot sealed in order to guarantee it cooks correctly.
Set your instant pot to meat/stew for 40 minutes. This is my favorite part of the whole process! Set your pressure cooker to meat/stew for forty minutes and forget about it.
After 40 minutes, open the seal to let vent completely. Do not attempt to open your instant pot until it has vented completely.
Open and separate out your ingredients. You will want your carrots and onions in one bowl, your potatoes in a mixing bowl, and your meat in a separate bowl.
Do not throw out the juice inside the instant pot! Save this for your potatoes.
Add parsley, stock from the pot, and nutiva butter to your mixing bowl.
Use your hand mixer to mash the potatoes. Your setting on the hand mixer will decide how fluffy your potatoes are.
Serve and enjoy!
