When we were homeschooling breakfast was fairly simple. We would get up and eat what we wanted. Since the kids made the choice to go to school things have definitely changed. I have had to make sure that whatever I have can be prepped in a hurry. At first we did a lot of processed foods but I just couldn’t justify the expense. I put together this easy breakfast sandwich recipe as a way to save us time and money.
Easy Breakfast Sandwich Recipe
This would be great for a brunch, meal planning, or to serve on a morning when you need a simple breakfast.
** Please note that this recipe makes 2 large sandwiches as I intended to freeze a great deal for future breakfasts.
Easy Breakfast Sandwich Recipe Ingredients
18 eggs
2 pounds turkey sausage
2 loaves French Bread
2 Cups Shredded Cheese
1 tablespoon minced garlic
1 teaspoon onion powder(You can use onion. I just hate the texture so I use the powder.)
pinch of salt
pinch of pepper
1 tablespoon honey (optional)
Easy Breakfast Sandwich Recipe Directions
Start by scrambling your eggs. You will add in your garlic, onion, salt, and pepper as you cook these.
Slice open your bread. I like to mash mine in a bit so the ingredients sit on it better.
Add your eggs and shredded cheese to the bread on a cookie sheet.
Preheat oven to 425.
Cook your ground sausage in a skillet until done. I like add a tablespoon of honey to it to sweeten it a bit. This is optional.
You will put your ground sausage on the other halves of your bread.
Add a layer of cheese.
Cook at 425 until cheese is melted.
Join your sandwich pieces together.
Serve and enjoy!
Freezer prep and cooking
If you are planning to freeze it to eat later, cut into individual sandwiches.
Wrap with foil and freeze.
If cooking from frozen, cook at 425 until heated thru. This will vary based on your oven so I suggest trying reheating the first time on a day when you aren’t in a hurry.
