Over the last few months, I’ve been eating in a different way and it has left my family craving some of their old favorites. One thing my husband asked for was my brown sugar shake and bake chicken. This is not a food allergy-friendly recipe. (more of those coming soon!) However, it’s quick, easy, and a family favorite.

Shake and Bake Chicken Recipe

You can make your own shake and bake. I have made my own a few times but if you are pressed for time you can purchase shake and bake at the store. I prefer the pork version for some reason. It just has a better overall consistency and flavor.

Brown Sugar Shake and Bake Chicken Ingredients

Shake ‘N Bake Original Pork 1 pouch- You could do the chicken mixture. I simply prefer the pork.
Chicken Breasts – Pick as many as you need for your family. I did a larger batch of 8 as I wanted to freeze the extra. The bag of the mixture should coat quite a bit of chicken for you.
Onion Powder – 1 Teaspoon
Basil – 1 Teaspoon
Italian Seasoning – 2 Tablespoons
Brown Sugar – 1/2 Cup

Making the Brown Sugar Shake and Bake Chicken

Start by mixing all of your dry ingredients in the provided bag. – Give it a good shake to mix it together well. Brown sugar can clump so you have to make sure to shake well to dissolve all the clumps.

Cut your chicken into smaller pieces. We made small chicken nuggets so that they will be able to cook quickly. I prefer using a pair of kitchen scissors to be sure that I can get each piece cut evenly.

Once your chicken is done being cut up, coat your chicken. You will do this by adding small amounts at a time to the bag and then shaking well to cover. You want to make sure that it gets all of the chicken coated. If you have too much chicken in the bag, it won’t coat as evenly.

Place chicken on a greased cookie sheet. I used coconut oil but you can use the oil of your choice. Coconut oil is not required.

Bake at 400° for 20 minutes or until completely done. – You can use a meat thermometer or cut open the chick to verify it is cooked to completion.

Easy Homemade Home Fries

Ingredients

Potatoes – 4 large potatoes
Onion Powder – 1 Tablespoon
Garlic Powder – 1 Tablespoon
Salt – 1/2 teaspoon
Coconut Oil – 1 tablespoon (You can use a different oil if you don’t have coconut.)

Cut your potatoes into fries. – I like to cut my potatoes length-wise and then slice them up from there. It’s a lot easier to cut a flat portion of potato and get the shapes you are really going for.

Set your potatoes aside. You will need them in a minute but first, you need to mix your seasonings together.

Mix together all of your seasonings in a bowl.  It doesn’t have to be a large bowl. The goal is simply to mix your seasonings together well so it is easier to season your potatoes.

Coat your potatoes with oil. You won’t need to use more than what was listed above in order to do that.

Lightly coat your sliced potatoes with the seasoning mixture.
